  • 2 teaspoons instant dried yeast
  • 4 tablespoons sugar
  • 4 cups + 2 tablespoons (525 grams) all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • ¼ teaspoon ground ginger
  • 1 cup (150 grams) dried currants or raisins
  • 6 tablespoons unsalted butter, melted
  • 2 large eggs, beaten, at room temperature
  • For the cross:
  • ⅓ cup (46 grams) all-purpose flour
  • 2 tablespoons sugar
  • For the glaze:
  • 2 tablespoons powdered sugar
  • Hot water

Instructions

  • Stir yeast and sugar into warmed milk and let sit until bubbly.
  • Combine flour, salt, spices, and dried fruits in a bowl.
  • Make a well, add milk mixture, butter, and eggs. Mix to form dough.
  • Knead until smooth, then let the dough rise in a warm place for 45 minutes.
  • Divide the dough and shape into 12 buns. Let rise for another 30 minutes.
  • Preheat oven to 400°F (200°C).
  • Mix flour and sugar for the cross; add hot water to create a paste.
  • Pipe crosses onto buns and bake for 15-20 minutes until golden.
  • Prepare glaze and brush over warm buns after baking. Cool on a rack.
