- 4 cups + 2 tablespoons (525 grams) all-purpose flour

- 1 teaspoon ground cinnamon
- 1 teaspoon allspice
- ¼ teaspoon ground ginger
- 1 cup (150 grams) dried currants or raisins
- 6 tablespoons unsalted butter, melted
- 2 large eggs, beaten, at room temperature
- For the cross:
- ⅓ cup (46 grams) all-purpose flour
- 2 tablespoons sugar
- For the glaze:
- 2 tablespoons powdered sugar
- Hot water
Instructions
- Stir yeast and sugar into warmed milk and let sit until bubbly.
- Combine flour, salt, spices, and dried fruits in a bowl.
- Make a well, add milk mixture, butter, and eggs. Mix to form dough.
- Knead until smooth, then let the dough rise in a warm place for 45 minutes.
- Divide the dough and shape into 12 buns. Let rise for another 30 minutes.
- Preheat oven to 400°F (200°C).
- Mix flour and sugar for the cross; add hot water to create a paste.
- Pipe crosses onto buns and bake for 15-20 minutes until golden.
- Prepare glaze and brush over warm buns after baking. Cool on a rack.
