- 3 tablespoons smooth peanut butter
- ¾ teaspoon Thai red curry paste
- ¼ teaspoon ginger paste or fresh grated ginger
- ¼ teaspoon soy sauce
- ½ teaspoon lime zest
- A few dashes of Sriracha sauce (optional)
- 3 tablespoons pineapple jam
- 1 tablespoon chopped fresh basil
- 2 slices of bread
- 1–2 tablespoons butter or oil for grilling/frying
Instructions
- Mix peanut butter, Thai red curry paste, ginger paste, soy sauce, lime zest, and Sriracha in a bowl until smooth.
- Spread the peanut butter mixture on one slice of bread and pineapple jam on another. Add fresh basil.
- Press the slices together to form the sandwich.
- Grill the sandwich in a frying pan with melted butter until golden brown on both sides.
- Slice in half and serve warm.
Notes
Use creamy peanut butter for a smooth texture.
Adjust spiciness by varying Sriracha sauce.
Let the sandwich rest before slicing to prevent spills.
