Ingredients

  • 2 cups red wine
  • 4 sprigs fresh thyme
  • 1 teaspoon minced garlic
  • 1 teaspoon crushed red pepper flakes
  • Salt and pepper to taste
  • 16 ounces steak
  • ½ large onion, diced (or 1 medium onion)
  • 8 ounces mushrooms, sliced
  • ¼ cup white wine
  • Cooking oil for sautéing

Instructions

  • Prepare the marinade by combining red wine, thyme, garlic, red pepper flakes, salt, and pepper in a saucepan and simmering.
  • Let the marinade reduce by half and cool, then discard thyme sprigs.
  • Marinate the steak for at least 4 hours in the cooled mixture.
  • Preheat grill or grill pan, grease lightly, and grill steak for 4-6 minutes per side.
  • Rest the grilled steak for 10 minutes before slicing.
  • Sauté diced onions in a skillet until softened, then add sliced mushrooms and cook until golden brown.
  • Deglaze the pan with white wine, cooking until dry.
  • Serve grilled steak topped with sautéed mushrooms and onions.

Notes

For added flavor, a splash of balsamic vinegar can be added to the mushrooms post-cooking.
Employ a meat thermometer to ensure the steak reaches desired doneness.
Allow the steak to rest before slicing to retain the juices.
