- 5 teaspoons (25 g) water
- ¼ cup (50 g) active sourdough starter
- 1 cup + 2½ tablespoons (275 g) water
- 4 tablespoons (60 g) olive oil
- 1 tablespoon honey (or maple syrup/sugar)
- 4 cups + 2 tablespoons (500 g) all-purpose flour
- 2 teaspoons (10 g) sea salt
Instructions
- Feed your sourdough starter 12 hours before mixing the dough.
- Mix active sourdough starter, water, olive oil, honey, all-purpose flour, and salt in a large bowl until shaggy.
- Cover and let rest for 1 hour.
- Knead the dough for 8-10 minutes until smooth, then let rise for 10-12 hours until doubled in size.
- Shape the dough and let it rise until it sits 1 inch above the pan rim.
- Preheat the oven to 450°F (232°C) and bake at 375°F (190°C) for 45-50 minutes.

Ensure your sourdough starter is active for best results.
Cover the dough during proofing to prevent drying out.
