- 2 large eggs
- ½ cup ketchup
- 1 tbsp Worcestershire sauce
- 1 ½ cups diced white sandwich bread
- ½ pint heavy cream
- ½ medium onion, diced
- 1 tbsp garlic, minced
- ½ tsp salt
- ¼ tsp pepper
- 2 lbs ground beef (80/20)
- 1 lb bacon strips
- ¼ cup BBQ sauce
Instructions
- Whisk together eggs, ketchup, Worcestershire sauce, bread, cream, onion, garlic, salt, and pepper in a large bowl.
- Gently fold in ground beef until just combined.
- Shape meat mixture into a log in a cast iron skillet or baking pan.
- Wrap bacon strips around the meatloaf, overlapping slightly.
- Preheat smoker to 250°F.
- Smoke meatloaf until internal temperature reaches 145°F, then brush with BBQ sauce.
- Continue smoking until internal temperature reaches 160°F.
- Transfer meatloaf to a wire rack and let it rest for 15-20 minutes before slicing.
Notes
Wet your hands when mixing to prevent sticking.
Use high-quality bacon for better flavor and texture.
Monitor internal temperature to keep meatloaf moist.
