Ingredients

  • ½ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 ½ cups diced white sandwich bread
  • ½ pint heavy cream
  • ½ medium onion, diced
  • 1 tbsp garlic, minced
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 lbs ground beef (80/20)
  • 1 lb bacon strips
  • ¼ cup BBQ sauce

Instructions

  • Whisk together eggs, ketchup, Worcestershire sauce, bread, cream, onion, garlic, salt, and pepper in a large bowl.
  • Gently fold in ground beef until just combined.
  • Shape meat mixture into a log in a cast iron skillet or baking pan.
  • Wrap bacon strips around the meatloaf, overlapping slightly.
  • Preheat smoker to 250°F.
  • Smoke meatloaf until internal temperature reaches 145°F, then brush with BBQ sauce.
  • Continue smoking until internal temperature reaches 160°F.
  • Transfer meatloaf to a wire rack and let it rest for 15-20 minutes before slicing.
