- 10 ounces tortilla chips, divided
- 4 cups Mexican-blend shredded cheese, divided
- 1 cup cooked black beans, divided
- 1 cup cooked yellow corn, divided
- Diced roma tomatoes
- Pickled jalapenos
- Sour cream or Mexican crema
- Diced red onions
- Chopped cilantro
Instructions
- Preheat the oven to 400ºF and line a large baking sheet with parchment paper.
- Heat olive oil in a skillet, add ground beef and cook with tomato paste and spices until browned.
- Layer half of the tortilla chips, beef mixture, cheese, black beans, and corn on the baking sheet.
- Repeat the layering process.
- Bake for 4-6 minutes until cheese is melted.
- Add fresh toppings and serve immediately.
