- 1 pound baby creamer potatoes (mix of red and white)
- 2 (15 oz) cans green beans, drained
- ½ onion, roughly chopped
- 6 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 ½ teaspoons salt (more to taste)
- 1 teaspoon black pepper
- ½ teaspoon red pepper flakes
- Fresh chopped parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the smoked sausage into ¼-inch thick rounds.
- Wash and cut the baby potatoes in half or quarters.
- Combine sausage, potatoes, green beans, onion, and garlic in a bowl.
- Add olive oil, Italian seasoning, salt, black pepper, and red pepper flakes; toss to coat.
- Transfer mixture to a greased 9×13-inch baking dish.
- Bake for 40-45 minutes or until potatoes are tender, stirring halfway through.
- Garnish with fresh parsley before serving.
