  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 teaspoons red food coloring
  • 1 cup (240 ml) buttermilk
  • 4 ounces (113.4 g) cream cheese, at room temperature
  • ¼ cup (56.75 g) unsalted butter, at room temperature
  • 3½ cups (420 g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl.
  • Cream butter, shortening, and sugars in a stand mixer until fluffy.
  • Add eggs one at a time, then mix in vanilla and red food coloring.
  • Combine wet and dry ingredients alternately until fully mixed.
  • Drop tablespoons of batter onto baking sheets and bake for 10 minutes.
  • Cool for 5 minutes before transferring to a rack.
  • Beat cream cheese and butter together, then add powdered sugar and vanilla.
  • Spread cream cheese filling on one cake and top with another to assemble.
