- ¼ cup (56.75 g) unsalted butter, at room temperature
- 3½ cups (420 g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, cocoa powder, baking powder, baking soda, and salt in a medium bowl.
- Cream butter, shortening, and sugars in a stand mixer until fluffy.
- Add eggs one at a time, then mix in vanilla and red food coloring.
- Combine wet and dry ingredients alternately until fully mixed.
- Drop tablespoons of batter onto baking sheets and bake for 10 minutes.
- Cool for 5 minutes before transferring to a rack.
- Beat cream cheese and butter together, then add powdered sugar and vanilla.
- Spread cream cheese filling on one cake and top with another to assemble.
