Ingredients

  • 1 lb gnocchi (500g)
  • 2 cups fresh basil (30g)
  • ½ cup fresh grated Parmesan cheese (50g)
  • 1 tbsp pine nuts
  • 1 clove garlic
  • ⅓ cup extra virgin olive oil (80ml)
  • Salt and pepper, to taste

Instructions

  • Combine basil, Parmesan, pine nuts, garlic, olive oil, salt, and pepper in a bowl.
  • Blend until smooth.
  • Boil salted water and cook gnocchi until they float.
  • Drain gnocchi and return to pot.
  • Add pesto and mix, adding reserved cooking water as needed.
  • Serve warm with extra Parmesan.

Notes

Use fresh basil for optimal flavor.
Do not overcook gnocchi; they should be tender, not mushy.
Adjust garlic to taste.
