Ingredients

- 1 lb gnocchi (500g)
- 2 cups fresh basil (30g)
- ½ cup fresh grated Parmesan cheese (50g)
- 1 tbsp pine nuts
- 1 clove garlic
- ⅓ cup extra virgin olive oil (80ml)
- Salt and pepper, to taste
Instructions
- Combine basil, Parmesan, pine nuts, garlic, olive oil, salt, and pepper in a bowl.
- Blend until smooth.
- Boil salted water and cook gnocchi until they float.
- Drain gnocchi and return to pot.
- Add pesto and mix, adding reserved cooking water as needed.
- Serve warm with extra Parmesan.
Notes
Use fresh basil for optimal flavor.
Do not overcook gnocchi; they should be tender, not mushy.
Adjust garlic to taste.
