Ingredients

- 1 lb organic carrots with tops on*
- 2 tbsp butter (or ghee, or other cooking fat of choice)
- 3 tbsp pure maple syrup
- 1/4 cup sliced almonds
- 1/4 tsp kosher salt
Instructions
- Trim leafy tops off the carrots and rinse under cool water.
- Heat a large nonstick skillet over medium heat and melt the butter.
- Add carrots in a single layer, cover, and cook for about 5 minutes, turning halfway.
- Pour in maple syrup, toss the carrots for about one minute until coated.
- Sprinkle sliced almonds and kosher salt, stir, and cook for an additional 3-5 minutes until glazed.
Notes
Choose uniform-sized carrots for even cooking.
Adjust the sweetness with more or less maple syrup to suit your taste.
Add a hint of orange zest or cinnamon for extra flavor.
