Ingredients

  • 1 Tablespoon unsalted butter (for greasing)
  • 1 ½ teaspoons all-purpose flour (for greasing)
  • 10 Tablespoons unsalted butter (cut into pieces)
  • 2 large eggs (room temperature)
  • ½ cup granulated sugar (100 g)
  • 3 Tablespoons light brown sugar (firmly packed)
  • 2 teaspoons vanilla extract
  • ⅛ teaspoon salt
  • 1 ¼ cup all-purpose flour (155 g)
  • 2 teaspoons lemon or orange zest (optional)

Instructions

  • Preheat the oven to 375°F (190°C). Grease madeleine pan with melted butter and flour.
  • Melt 10 tablespoons of butter and let it cool slightly.
  • Whisk together eggs, granulated sugar, light brown sugar, vanilla extract, and salt until frothy.
  • Sift flour into the egg mixture in three parts, folding gently to keep the batter airy.
  • Add cooled melted butter and optional zest, folding just until combined.
  • Spoon batter into each cavity of the pan and bake for about 9 minutes until golden.
  • Cool on a wire rack and dust with powdered sugar or dip in chocolate if desired.

Notes

Use room temperature eggs for better mixing.
Well-grease the pan to prevent sticking.
Avoid over-mixing to maintain light texture.
