- 2 teaspoons vanilla extract
- ⅛ teaspoon salt
- 1 ¼ cup all-purpose flour (155 g)
- 2 teaspoons lemon or orange zest (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease madeleine pan with melted butter and flour.
- Melt 10 tablespoons of butter and let it cool slightly.
- Whisk together eggs, granulated sugar, light brown sugar, vanilla extract, and salt until frothy.
- Sift flour into the egg mixture in three parts, folding gently to keep the batter airy.
- Add cooled melted butter and optional zest, folding just until combined.
- Spoon batter into each cavity of the pan and bake for about 9 minutes until golden.
- Cool on a wire rack and dust with powdered sugar or dip in chocolate if desired.
Notes
Use room temperature eggs for better mixing.
Well-grease the pan to prevent sticking.
Avoid over-mixing to maintain light texture.
