- 4 large eggs
- ¼ cup powdered sugar (for finishing)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9" x 9" baking dish.
- Combine butter, 1 cup flour, ½ cup sugar, and salt in a food processor to create the shortbread crust.
- Pat the shortbread dough into the bottom of the baking dish and bake for about 12 minutes until golden.
- In a bowl, whisk fresh lemon juice, lemon zest, 1 ½ cups sugar, ¼ cup flour, and eggs until smooth.
- Pour the lemon filling over the warm crust and bake for an additional 20 minutes until set.
- Allow the bars to cool completely, dust with powdered sugar, cut into squares, and serve.
