  • 1 1/2 cups miniature marshmallows
  • 1/2 cup butter (for the icing)
  • 3 tablespoons cocoa powder (for the icing)
  • 6 tablespoons Coca-Cola (for the icing)
  • 16-ounce package of confectioners’ sugar (sifted)
  • 1/2 teaspoon vanilla extract (for the icing)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×13-inch pan.
  • Sift together flour and sugar in a large mixing bowl.
  • Combine butter, cocoa powder, and Coca-Cola in a saucepan and bring to a boil.
  • Pour the boiling mixture over the flour and sugar, then mix in buttermilk, baking soda, eggs, vanilla, and marshmallows.
  • Pour the batter into the prepared pan and bake for 30-35 minutes.
  • Prepare icing by heating butter, cocoa powder, and Coca-Cola in a saucepan until boiling.
  • Mix in confectioners’ sugar and vanilla extract until smooth.
  • Poke holes in the hot cake and drizzle the icing over the top.
