  • 5.1 oz Guinness
  • 1.8 oz cocoa powder
  • 8.8 oz light brown soft sugar
  • 4.2 oz whole milk
  • 3 medium eggs
  • 8.8 oz plain flour
  • 1 tsp bicarbonate of soda
  • 5.3 oz unsalted butter (room temperature)
  • 5.3 oz icing sugar
  • 10.6 oz full-fat soft cream cheese
  • 1 tsp vanilla extract
  • Chocolate shavings for garnish

Instructions

  • Preheat the oven to 320ºF (160ºC) or 280ºF (140ºC) for fan ovens and line two 8-inch round cake tins with parchment.
  • Melt unsalted butter in a saucepan, then mix in Guinness, cocoa powder, light brown sugar, whole milk, and eggs.
  • Add plain flour and bicarbonate of soda to the wet mixture and stir until combined.
  • Divide batter evenly in the prepared tins and bake for 40-45 minutes until a toothpick comes out clean.
  • Beat room temperature unsalted butter until fluffy. Gradually add icing sugar and mix until smooth.
  • Incorporate cream cheese and vanilla into the butter mixture until creamy.
  • Layer one cooled cake and spread half of the frosting on top, then place the second layer and coat the entire cake.
  • Garnish with chocolate shavings on top.

Notes

Use room temperature butter and eggs for better emulsification.
Chill the cake for better flavor melding and texture.
Perform a toothpick test to ensure the cake is not overbaked.
