- 6.2 oz unsalted butter
- 5.1 oz Guinness
- 1.8 oz cocoa powder
- 8.8 oz light brown soft sugar
- 4.2 oz whole milk
- 3 medium eggs
- 8.8 oz plain flour
- 1 tsp bicarbonate of soda
- 5.3 oz unsalted butter (room temperature)
- 5.3 oz icing sugar
- 10.6 oz full-fat soft cream cheese
- 1 tsp vanilla extract
- Chocolate shavings for garnish
Instructions
- Preheat the oven to 320ºF (160ºC) or 280ºF (140ºC) for fan ovens and line two 8-inch round cake tins with parchment.
- Melt unsalted butter in a saucepan, then mix in Guinness, cocoa powder, light brown sugar, whole milk, and eggs.
- Add plain flour and bicarbonate of soda to the wet mixture and stir until combined.
- Divide batter evenly in the prepared tins and bake for 40-45 minutes until a toothpick comes out clean.
- Beat room temperature unsalted butter until fluffy. Gradually add icing sugar and mix until smooth.
- Incorporate cream cheese and vanilla into the butter mixture until creamy.
- Layer one cooled cake and spread half of the frosting on top, then place the second layer and coat the entire cake.
- Garnish with chocolate shavings on top.
Notes
Use room temperature butter and eggs for better emulsification.
Chill the cake for better flavor melding and texture.
Perform a toothpick test to ensure the cake is not overbaked.
