- 2 Tablespoons butter
- 2 lbs. boneless skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 yellow onion, diced
- 1 stick celery, diced
- 4 cups broccoli florets (about ½ lb.)
- 1 Tablespoon olive oil
- 10.5 oz. cream of chicken soup
- 2/3 cup sour cream
- ½ cup milk
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon mustard powder
- 2 ½ cups cheddar cheese, shredded
- ½ cup crushed Ritz crackers (or panko breadcrumbs)
- 2 Tablespoons butter, melted for topping
Instructions
- Preheat oven to 350°F. Melt butter in a large pot. Season chicken with salt and pepper.
- Sauté chicken, onions, and celery for 3 minutes until chicken is halfway cooked.
- Add broccoli and olive oil; cook for 3-5 minutes until chicken is cooked and broccoli is tender.
- Stir in cream of chicken soup, sour cream, milk, and seasonings; mix until combined.
- Transfer mixture to a greased casserole dish and top with remaining cheese.
- Cover with foil and bake for 20 minutes; then bake uncovered at 400°F for 8-10 minutes until golden.
- Mix melted butter with crushed crackers, sprinkle on top, and bake until the topping is golden brown.
- Let rest for 5 minutes before serving.
Notes
Avoid overcooking the chicken during the initial sauté to maintain juiciness.
Add extra vegetables like peas for additional flavor.
Homemade cream sauce can elevate the dish.
