- 2 pounds Yukon Gold Potatoes, cleaned and cut into quarters or halves
- 2 tbsp olive oil
- 2–3 tbsp homemade ranch seasoning mix or 1–1.5 packets of store-bought ranch seasoning
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt and pepper to taste
- ½ cup shredded cheddar cheese (or dairy-free alternative)
- ¼ cup grated Parmesan cheese (or dairy-free alternative)
- 2 tbsp chopped chives for garnish
- Green onions for garnish
Instructions
- Preheat the oven to 425°F (220°C) and prepare a baking sheet.
- In a large bowl, toss potatoes with olive oil, ranch seasoning, onion powder, garlic powder, salt, and pepper.
- Spread seasoned potatoes on the baking sheet and roast for 25-30 minutes, stirring halfway.
- Sprinkle cheese over hot potatoes and return to the oven for 5 minutes until melted.
- Garnish with chives and green onions before serving.
Notes
Consider adding your favorite herbs for extra flavor.
Ensure potatoes are cut evenly for uniform cooking.
Broil for a couple of minutes to achieve a crispier texture after cheesing.
