  • 1/2 tsp kosher sea salt
  • 1/4 tsp ground black pepper
  • 1/3 cup buffalo sauce (recommended: Frank's buffalo sauce)
  • 3 tbsp ranch dressing or bleu cheese dressing

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet.
  • In a bowl, combine ground chicken, panko breadcrumbs, and beaten egg; let soak for 5 minutes.
  • Add grated carrot, minced celery, green onions, garlic, paprika, salt, and pepper to the mixture.
  • Mix gently to combine, being careful not to overwork.
  • Form the mixture into 1.5-inch meatballs and place on the baking sheet.
  • Bake for 15-20 minutes until internal temperature reaches 160°F (71°C).
  • Toss baked meatballs in buffalo sauce until coated.
  • Serve with ranch or bleu cheese dressing and garnish with green onions.

Notes

Use a digital meat thermometer to check internal temperature.
Soak panko breadcrumbs for a better meatball texture.
