Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet.
- In a bowl, combine ground chicken, panko breadcrumbs, and beaten egg; let soak for 5 minutes.
- Add grated carrot, minced celery, green onions, garlic, paprika, salt, and pepper to the mixture.
- Mix gently to combine, being careful not to overwork.
- Form the mixture into 1.5-inch meatballs and place on the baking sheet.
- Bake for 15-20 minutes until internal temperature reaches 160°F (71°C).
- Toss baked meatballs in buffalo sauce until coated.
- Serve with ranch or bleu cheese dressing and garnish with green onions.
Notes
Use a digital meat thermometer to check internal temperature.
Soak panko breadcrumbs for a better meatball texture.
Adjust buffalo sauce quantity to match spice preference.
