- 1 baguette
- 3 Tbsp extra virgin olive oil
- 1/3 cup shredded parmesan cheese
Instructions
- Core and dice the tomatoes, draining excess juice.
- Roll and slice basil into thin ribbons, mixing with tomatoes.
- Mince garlic and mix with olive oil; combine with tomatoes and seasonings.
- Preheat oven to 400°F and slice baguette diagonally.
- Brush bread with garlic oil and sprinkle parmesan cheese.
- Bake toast for 5 minutes, then broil for 1-2 minutes until golden.
Notes
Use ripe tomatoes for the best flavor.
Let tomato mixture marinate longer for richer taste.
Consider adding diced mozzarella for a creamy variation.
