  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 8 boneless skinless chicken thighs (about 2 pounds)
  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ⅔ cup apricot preserves
  • ½ medium orange, juiced (about ¼ cup)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ketchup
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon chili powder
  • ⅛ teaspoon crushed red pepper flakes
  • Scallions, sliced, for garnish

Instructions

  • Preheat the oven to 375°F and line a baking sheet with parchment paper.
  • Combine olive oil, kosher salt, black pepper, garlic powder, and paprika in a bowl. Pat the chicken dry and mix well to coat.
  • Place the seasoned chicken on the baking sheet and bake for 15-20 minutes until cooked through.
  • In a skillet, combine apricot preserves, orange juice, apple cider vinegar, ketchup, honey, Dijon mustard, Worcestershire sauce, onion powder, garlic powder, kosher salt, black pepper, chili powder, and crushed red pepper flakes.
  • Whisk together and simmer for 4-6 minutes until sauce thickens.
  • Toss cooked chicken in the apricot sauce and serve garnished with scallions.

Notes

Ensure the chicken thighs are patted dry for better seasoning adherence.
Allow the sauce to simmer long enough for a richer flavor profile.
A meat thermometer is helpful to check for the chicken’s doneness.
